I know I’ve been a bit quiet on these squares recently and the truth is I’ve had to take a little step back from blogging and prioritise my time better as I’ve taken on a lot more work in my business. As much as I love blogging, it doesn’t pay my bills and like most people who are self employed; my business has been hit this year with childcare challenges amongst other things😬
The other thing I need to confess to, when I’m busy the first thing I stop doing is look after myself nutritionally. As a food blogger I obviously love food and cooking but as a working mum of 3 I have to juggle and I can become very lazy with my food choices when I’m against the clock! BUT the past couple of weeks I’ve started to feel run down...not in a Covid way but in a fatigue way and I knew I needed to get some nutrients into my body!🥦
So if like me, your body is struggling to get used to the ‘new normal’ then this might be the stew for you. I made it SO simple that I could throw it in the slow cooker in my lunch break and it required the absolute bare minimum in preparation!
The results were a delicious and warming stew for dinner which will keep for tomorrow.
Here’s the recipe if you fancy making it...I used veggie sausages as I had them in the freezer but the real chorizo deal would be even better...

Ingredients
Frozen Veggie Chorizo sausages
Frozen chopped onions
Frozen kale
2 cans of chopped tomatoes
1 can of cannellini beans (rinsed)
Lazy garlic (there’s a theme right?!)
1 tsp dried chilli flakes
Sprinkle of paprika
Sprinkle of mixed herbs
Stock cube
A cans worth of water
Salt & pepper
1 tsp sugar/sweetener
Handful of fresh basil
Goats cheese/curd
Throw everything into the slow cooker APART from the goats curd & basil. I personally prefer the cannellini beans drained & washed very briefly. Cook on low for 8 hours or medium for 5. Spoon on a few pinches of goats curd & a handful of basil.
