I was back on @bbcoxford tonight with @itsmeadamball and this was the recipe. I personally love it as an alternative to a bolognese and my diners all agreed, it went down a storm!
This recipe was from the lovely @annasfamilykitchen who has so many wonderful one pot dishes so check her out if you love a one pot wonder 🙌
To make this dish you will need...
8 Cumberland Sausages
1 chopped onion
2 crushed garlic cloves
400g passata
100 mls red wine / or you can use balsamic vinegar
1/2 tsp chilli flakes
1 tsp fennel seeds
1 tsp smoked paprika
400g pasta
Using a wide/deep pan, fry the onions for 5 minutes.
Remove the skins on the sausages and use the meat (great hack!). Add the sausage meat to the pan and break up.
Add the garlic, fennel, chilli & smoked paprika. Fry the mixture for around 10 minutes or until the sausage is browning. Add the wine, let it bubble a bit and add the passata.
Put your pasta on to boil at this point and give the ragu another 10 minutes or so to simmer and then add the drained pasta into the ragu.
Serve with a french stick and enjoy this Ragu whilst wondering if you’ll ever make a bolog again 🤷♀️
