Easy Peasy Chicken Kiev Traybake

“Easy Peasy Chicken Kiev Traybake” is what I called this recipe when under pressure to choose a name on @bbcoxford tonight 📻 ⁣⁣

⁣⁣

It’s definitely easy peasy but I don’t think that name gives the dish enough credit as it‘s packed with so much flavour and zing, you’d never know it was so simple 🍋 ⁣⁣


⁣⁣Here’s how it’s done...⁣⁣

⁣⁣

Baby potatoes ⁣⁣

Olive Oil⁣⁣

1 tsp Smoked paprika ⁣⁣

1 tsp Garlic granules⁣⁣

Chicken breasts⁣⁣

50g Unsalted butter ⁣⁣

2 cloves of crushed garlic ⁣⁣

1/2 juiced lemon⁣⁣

Flat leaf parsley ⁣⁣

⁣⁣

Dice the potatoes and tip into a shallow roasting tray. Spray with oil, season & put in the oven for 20 minutes.⁣⁣

⁣⁣

In a large bowl, mix the smoked paprika & garlic granules together with a drizzle of oil & seasoning. Cover the chicken with the mixture and add to the roasting tray for the last 20 minutes.⁣⁣

⁣⁣

While that cooks, melt the butter in a pan and add the crushed garlic & heat through for a minute or so. Let it cool and add the lemon juice and parsley. ⁣⁣

⁣⁣

Drizzle the sauce over the chicken (and everything you ever eat in future!)⁣

⁣⁣

This would make a delicious alternative to a roast dinner in the warmer months, washed down with a cold glass of white wine...OBVS 🤷‍♀️⁣⁣
