American Pancakes - Without the 'Faff'

Hands up if you love American Pancakes but are too lazy to make them!šŸ™‹šŸ¼ā€ā™€ļøā£

I chose this recipe for todayā€™s segment on @bbcoxford with @itsmeadamball after I saw it in @nadiyajhussain new cookbook ā€˜Time to Eatā€™. Itā€™s such an easy way to make American Pancakes without the faff! ā£

Iā€™ve edited it slightly to make a plain version because my family are all very individual with our pancake toppings! (Thatā€™s code for very picky!)šŸ„ž

ā£

If youā€™re looking for a lazy pancake breakfast for a crowd, then hereā€™s how you can give it a go...ā£

ā£

Pancake Traybake ā£

ā£

Serves 5 ā£

ā£

250g plain flourā£

1 tsp baking powderā£

1/2 tsp saltā£

3 tbsp caster sugarā£

170mls whole milkā£

2 medium eggsā£

2 tbsp vegetable oilā£

Icing sugar ā£

ā£

Put the flour, baking powder, salt & sugar into a bowl and whisk.ā£

ā£

Add the milk, eggs and oil and whisk until you have a thick batter.ā£

ā£

Oil a brownie tin and pour in your batter mixture.ā£

ā£

Bake in the oven at 160 degrees, for 10-15 minutes or until the surface is shiny and thereā€™s no wobble. ā£

ā£

Dust with icing sugar, cut into squares and serve with your favourite pancake toppings. ā£

ā£

Apparently you can freeze it to use at a later date but there wasnā€™t any left in my household šŸ¤·ā€ā™€ļøā£
