30 Minute 'Paella'

Never am I happier than when I’m beside a big ole pan of Paella!🥘 ⁣

With a heatwave on the way I challenged myself to recreate this amazing dish within 30 minutes for last nights slot on @bbcoxford with @itsmeadamball ⁣

It’s a long way from the traditional recipe as I’ve had to make a few cheats to get the time down but I think it still tastes pretty good and will give you a taste of summer without the faff!⁣

If you fancy making it, here’s the recipe...⁣

30 minute ‘Paella’⁣

Serves 4⁣

Olive oil⁣

1 chopped onion⁣

2 crushed garlic cloves ⁣

Red pepper⁣

Chorizo chunks⁣

250g Paella rice⁣

500mls Chicken stock ⁣

1 teaspoon Smoked paprika⁣

A pinch of saffron⁣

Cooked Prawns ⁣

Lemon wedges⁣

Use a wide pan (or paella pan) and saute the onion, pepper, garlic & chorizo for 5 - 10 mins or until the chorizo is browned.⁣

Add the paella rice & paprika and mix. ⁣

Pour in the stock, saffron & seasoning and simmer for 15 minutes- you’re not supposed to stir it from this point, let a crust form on the bottom to get that smokey flavour.⁣

Add the prawns for a few minutes at the end.⁣

Serve with lemon wedges & a big fat glass of Sangria🍹⁣

Feel instantly happier ❤️🍴
